This is like candy to me...I cant stop eating it. YUM!! You might be able to get away with out using the Cardamom if your really worried about the cost of it. I used it and am happy I did. I plan on making these for so many different occasions like holidays and for me just to snack on. I love them!

If folks are concerned about cost, then don't make the recipe. Nuts are generally expensive and spices (even cardamom can be purchased in smaller quantities (shop Penzey's spices. For those that are critical, shame on you- do your homework prior to making any recipe and you will be much happier with the end result. Happy baking!

I just made these today to include in a wine gift basket and they are amazing. Yes,Kit ,they do come out gooey at first,but if you read the directions,Giada clearly said to let them cool for an hour, at which time they were dry and crisp, but not hard. My adult daughter and some of her friends were over and they all LOVED them. I did cut down the curry by about 3 teaspoons and did not have Cardomom,and they were still exceptional. And,really, who complains about throwing away two egg yolks when you are spending that much money on nuts. Have you never made a meringue???? If you have a constructive complaint that may help other readers, then by all means suggest it but please keep the trash comments to yourself. Giada is one of the most gifted chefs out there and I will continue to make her recipes ,as I have never been disappointed.

I don't know why there were so many complaints about this recipe, and Giada for that matter. If you don't like her, don't watch her. As far as the egg yolks go, please...! No one is making you throw them away. Save them for later use.
This is a wonderful recipe. Very easy to make and sooooo delicious. We could not stop eating them. I substituted pecans for the walnuts because of allergies, and they were awesome in this mix.
Don't freak about the cost of the spices. If you purchase whole green cardamom and grind them yourself, it's a lot less expensive expecially if purchased at an Indian grocery store.
I highly recomend trying this recipe. These nuts would make a great hostess gift as well.

I have made these several times and have shared this recipe with many who have tried these at my house. If you plan to make these often (perhaps even sharing them as a hostess gift, then just invest in the ingredients as Giada has them indicated. I bought all the nuts at Costco and all the spices are available in your bulk food section (except the cardamon. I found that for $9 a jar at WINCO. It's really an easy treat and everyone that I have served them to has loved them!

Cardamon is expensive and rather than buying an $18 jar at the supermarket I went to a health store that sells spices in bulk, and spent under $3 for a similar amount. Unless you don't like the flavor of cardamon, it's worth it to add the ingredient because it marries well with the other spices.

I watched this episode. Wrote down every ingredient and instructions. I normally do not use a lot of seasonings in our food due to health restrictions but thought I would try this for a party. Buying the Cardamom, Curry, and Cumin set me back a LOT of money. Cardamom alone was $13.00. Least expensive I could find. Sure wish I had not purchased it. My house smelled like Cardamom and Curry afterwards. Needs more salt and sugar. I cooked it at the temperature and time setting following the directions. Came out gooey. Okay taste. Not great. A real waste of 6 cups of nuts, not to mention spices that are expensive. Another note: my first episode watching this show. Can she possibly say the words 'so' and 'grab' any more often? I don't understand why she is judging the Next Food Network host show.

This is a wonderful unique nut receipe. You can allways save the yolks from the eggs for other receipes (freeze them or use in other ways I wish people would be more positive about other peoples receipses. Just don't try them if you have a problem with ingredients or anything else.

I have to agree w/Russeville, AR. In todays economy and MANY people starving I couldn't believe it when Giada through out the yolks in this recipe!!!!
I also noticed that when these chefs prep food i.e. carrots they cut the bottom off AND WASTE TOO MUICH!!! Don't these "people" know any better that you shouldn't waste food!?!?!?!?!?
Giada isn't the only one, a lot more "chefs" on the Food Network do the same thing. I myself would like to know WHY??
I'm sure I won't get a response-----------
