Delish! Used fresh spinach then cooked and drained. Would definitely make again.

I was so disappointed by this recipe! It was dry and the combination of mushrooms and macaroni made for a mushy chewy meal. It lacked any sauce and was a lot of work and wasted food. I tried to fix it with some chicken and sauce the second night but then the noodles were overdone. A pound of noodles!!! Yuck yuck yuck

I usually love Giada's recipes but this one was a miss for me. I don't think it looked good and it only tasted ok. But I will be back for her recipes because she rocks!

I learned that jumping into an unfamiliar recipe as I'm cracking open a third beer is poor judgment. My measuring was accurate, however, I failed to put all the ingredients together in a timely fashion. The macaroni cooled down, the veggie mixed cooled down, and it went into the oven at room temp. The cheese was not thoroughly melted at 40 minute, so I jacked up the oven temp and added 10 more minutes. Ah yes, cooking under the influence ... created clumpy cheese and dried out macaroni, and yet it was reasonably good: pleasantly spicy. I give it 4 stars. I get 2 stars for merely avoiding personal injury.

If I spend the time to make a homemade mac-n-cheese, this isn't the one I'll do again. It was dry, and not very flavorful.
