    This was excellent...but only because I added one quart of marinara sauce instead of the tomatoes and one pound of ground beef, which I browned separately and drained, to the completed vegetable mixture. I also used one pound of large shells instead of elbow pasta. It was a bountiful dish!

    Great dish! It would be helpful to understand that this is not meant to be a wet, gooey mac 'n cheese dish. It is flavorful and has wonderful textures. Remember, its a baked recipe. The recipe works with the ingredients as listed. Perhaps it helps to have seen Giada make the dish on her show.

    I used 1/2 pound of elbows - there is no way a pound would work - and still doubled the tomatoes. Next time, I won't drain the spinach at all. Have to remember that most of these chefs use specialty shop cheeses, which no doubt contribute more flavor. But extra red pepper flakes and fresh ground nutmeg added an interesting twist. I think some milk poured over before you bake wouldn't hurt at all. I like the combo. I will go again and do my tweaks, with the cheeses from the deli, but not the specialty varieties. This can be good without breaking the bank. You can go with sharp cheddar as one mentioned, but this is a departure from basic mac and cheese and I want to try it again. I'm glad to have found this.

    This was a very tasty recipe!! It's not super cheesy since it's a bake, but the flavor is very good! I used real mozzarella cheese which gave it some cheesiness. It was a hit with friends we had dinner with! They are asking for the recipe!

    I was so disappointed by this recipe! It was dry and the combination of mushrooms and macaroni made for a mushy chewy meal. It lacked any sauce and was a lot of work and wasted food. I tried to fix it with some chicken and sauce the second night but then the noodles were overdone. A pound of noodles!!! Yuck yuck yuck

    this has got to be my favorite macaroni & cheese casserole. i now fix it a day ahead, because it tastes soooo much better heated up the next day.
