My family and I really enjoyed this DELICIOUS recipe. After reading others' reviews, I did "tweak" the recipe just a bit: I doubled the tomatoes (I used seasoned diced tomatoes w/garlic & olive oil, added an extra clove of garlic and, since we are mushroom lovers, I also used extra mushrooms (almost double. We loved it and will definitely make it again. I'm looking forward to eating the leftovers today. YUMMY!

The best recipe I've ever made. Not a crumb was left when I served it. I used a little more red pepper flakes and was generous with the cheeses, especially the mozzarella. This recipe will make your family and guests swoon.

I am glad I read these reviews before trying this one. I did use Rotel Tomatoes to give some extra flavor and spice. It was plenty done at 20 minutes.

Other reviews said this dish was too dry, so I added some pasta water to it as a precaution. This recipe is great! My teen son devoured it!

I had to give it a 3 because I think that if it's made as written, it would be incredibly dry. The alterations I made bumped it up a bit. I added a cup of skim milk to the vegetable mixture and let it come to a good bubble to incorporate all of the flavors. I also threw in about 1/2 cup of ricotta because I had it on hand. Reduced the amount of pasta too, to get the ratio right. I think that this is one of those recipes that you need to play with and everyone can mold it to suite their tastes. I applaud Giada for making me think about adding veggies to what is essentially a baked mac and cheese dish.
