    This dish was so delicious, healthy and Easy! It should not be rated medium since it was so easy to make! Love this soup! Love Giada!

    Lots of ingredients, so make sure you have it all before you start. A little too spicy for my taste, but it mellowed out the next day. Will use 1/3rd chili powder next time. Didn't like how the broccoli looked the next day. Forgot to get the lentels on my shopping list, so substituted 3 cups of frozen peas at the end of the cooking. Cooked it longer to thicken the liquid. Used a large pot, but it still wasn't big enough for the amount of liquids and ingredients, so had to split it up with another pan. Makes enough servings for a small army. All in all, it was good and very healthy.

    I love spicy stuff and I like cooking healthy. This soup has such a rich flavor and I didn't even use the parmesan rind. Next time I have one, I'll try it though. Recommended for those who like spicy, healthy, and easy cooking. My advice is to check your shopping list twice as this has a lot of ingredients and I ended up going back to the store twice. It could've just been a brainfart kind of night for me though. Hope you enjoy it.

    Not only did my kids love this but so did all my friends! It was full of such great flavor! We took the left overs and cooked stew meat like you usually do and added it to the soup! It was a completely whole new meal!

    There might be one thing I would change, I didn't love the broccoli in it but, I did love the squash. I would add another 2 squash for the broccoli. I thought the flavor was awesome. In just a few minutes I'm going to try the cornbread and have another bowl of soup. YUM!

    My daughter is vegetarian and we all love Italian food. We used vegetarian buillion and otherwise followed the recipe exactly. Very good and hearty. We have enough 'leftover' soup for days. It is very healthy as well, having lots of fiber.

    The only thing I would like to do different next time is make it with less garlic and maybe add mushrooms (portabello. The only other thing is half of the house (there are four of us liked the fresh basil as a garnish, the others didn't. I also did not like the parmesian during the cooking. It was a little 'gookey' in the stirring process and makes it prone to burning.
