could not have been easier! makes a huge portion of food-had to freeze half. my husband enjoyed it even though he usually doesn't like chick peas.

I made the recipe with only a 1/4 cup of the chili powder and I think it has plenty of spice and flavor. I might reduce the chili a little more next time.
I also left out the broccoli and added more carrots and zucchini and squash. I waited to add the cannelini beans until the cooking was done, so they would not turn to mush.

Usually love Giada's recipes, but this one was not right. It didn't even smell good when it was cooking. I think the chili powder over powered the other ingredients. Tried to eat it, but ended up throwing it all out.

This soup was filling and easy to prepare. I left out the cheese rind, used double the amount of zucchini and omitted yellow squash because I didn't have it, and didn't add basil at the end either. I also used V8 instead of tomato juice. My only mistake was using 1/4 cup extra hot chili powder from my local indian grocery store and 1/4 cup regular chili powder to make the 1/2 cup. I love spicy food, but during the summertime that was just too much. I served it with a sundried tomato ciabatta bread and it was a filling meal. Nobody seemed to miss the meat. Good one, Giada!

This is a great dish! It's thick like a stew, but tasty like a soup (a stoup?. It is full of flavor-units, without all the calories that normally requires. My wife and I thoroughly enjoyed it for dinner on a rainy evening with a loaf of French bread. Like other reviewers, I started with only half the chili powder then added as much more as I thought my wife could handle. I also substituted kidney beans for the garbanzos. The recipe makes a lot, so we get to enjoy it again.
