    I tried this dish on a day when I had my best friend coming over for lunch. She absolutely loved it. My hubby loved it as well. It was easy to make, looked and smelled wonderful. It would make a great rainy or cold day meal! Mmmmm...

    I made this for a brunch and I couldn't believe how perfect it turned out. It tasted even better cold the next day! Highly recommended.

    I cook often for my family, so at this point, I find it hard to Wow them. However this is just what I did with my recent Spinach and Pancetta Strata. Everyone including myself loved the taste. Grazie Giadda

    Super recipe and very easy. I used a stale baguette and a can of condensed milk with equal part of water instead of regular milk. As I had no garlic, I added quite a bit of Italian Seasoning from the spice isle in the supermarket and a package of shredded Cheddar with ground beef. I know I'd like it better as written, but was taking it to a very Anglo party. Nothing was left.

    After watching the show, I was inspired to give this a try. I love quiche and thought this would taste great since many of the same ingredients are also in the quiche I make occasionally.
    I was pleasantly surprised to find that this dish was easier to make than quiche and guess what? My family absolutely loved it!
    My one variation to this recipe? Adding a half pound of chopped bacon to the pancetta because we all know that pancetta isn't exactly easy on the budget. Plus, the additional bacon enhances the overall flavor of the strata.
    The Spinach and Pancetta Strata goes great as a side dish to any meal in place of the all too familiar mashed potatoes or stuffing. This one's definately a keeper. Give it a try and you too will be pleasantly surprised.

    I was so pleased to try a new Recipe I saw on Food Network. I made the Spinach and Pancetta Strata ahead of time and cooked it for our Monthly Girl's Night Out. Everyone loved it and wanted a copy of the recipe! I was surpised how many people did not know what Pancetta is. Thank you for such a yummy and easy treat!

    Easy to put together. Looked great once together. I wish it was crunchy all the way through - too eggy and soggy but tasted really good. Great for a dish at a brunch. I would make it again and maybe cook a little longer.
