After reading some reviews I tweaked the recipe by changing: 1 large onion (not small, doubling the pancetta to 6oz, 3 large garlic cloves, a whole 1lb.loaf of Ciabiatta - when I cubed it I got approx. 9-10 cups, 1 1/2 cups grated good quality fresh Parmesan Cheese and only 2 cups of milk.
The recipe was easy to follow. The extra Parmesan was a must. Everyone loved it. Will use it again.

I, of course, made a mistake when I made it. I didn't have the recipe in front of me, so I just did it from memory. I used old dinner rolls for my bread. They were "reduced for quick sale" at the grocery store. I also used half as much milk as I should have. I also used more garlic than the recipe called for. My family loved it.

The dish wasn't too bad. It was definitely a nice change of pace from our norm. I might try this again for a potluck dish.

This recipe had me very excited as I was putting it together. The presentation is just beautiful, I couldn't wait to taste it. I was so disappointed, we didn't like it at all. Not wanting to waste it, I passed the dish to my Mom, who likes most everything. She fed it to her chickens!

I'm so disappointed. This dish was so fun to make and looked and smelled amazing when cooked. The flavors were great, except for the texture, it was very spongey and egg-y. I am someone who LOVES eggs...but it was just too egg-y for some reason. I took other reviewers advice about what they could have done to make it better...so i doubled the garlic and cheese. Flavor-wise, it was excellent...texture-wise...it could have been better if it was flakier all the way through instead of spongy. I used italian bread...i wonder what other bread I could have used instead?

A great dish to make ahead when you know you are having overnight guests. Very filling. I had roasted veggies for a side dish and the meal was complete.
