    I was very disappointed in this recipe - the orange rind was too bitter and overpowering. It ruined the entire vinaigrette. I won't be making this again. On a more positive note, the prosciutto was great, and I will be using this technique in other salads.

    loved it!! this one is a keeper!! use only one orange, two is a bit too much and you will not taste the balsamic vinegar.

    The orange vinaigrette was a huge hit. My son asked me to make it just to have in the fridge. I did add goat cheese, mandarin oranges & strawberries & sugared almonds. I will make this again!!!!

    Excellent all around dressing I will use often. Dispensed with the prosciutto and instead added fresh strawberries and feta to the spinach.

    Made this recipe yesterday, went by the measurements, except after reading the previous reviews, used only one-half cup evoo and only used 1/4 tsp salt/pepper. Made a salad w/lettuce, herb goat cheese, clementines, carrots, cukes, pecans and croutons. The dressing was divine on it. Yummy!!!

    I've made this salad for a few gatherings and it was always a big hit. I added dried cranberries, finely sliced red onion, blue cheese and pecans to it. The dressing itself is good on just about any salad.

    Two words: Delicious & Healthy
    I had a bunch of spinach and I decided to make this salad and I'm so glad I did...I left out the prosciutto and it's still a home run! I also added some mushrooms and tomatoes. Also, I cut back on the EVOO from the recommendations of other reviews to only half a cup.
