This was by far the BEST roast I have ever made. My hubby went on and on how good this was. He said that he wants me to make this often. The gravey really makes this dish. I followed to a T except for used shoulder roast as that is what I had. I served this with mashed spuds and califlower roasted.

Everything about this recipe is amazing! It's incredibly delicious, easy and just as delicious the next day if you are lucky enough to have left overs! I always have lots of the juices for gravy and the meat is super tender, it just falls apart. I follow the recipe exactly EXCEPT I use a crock pot on low, all day, instead of the Dutch oven in the oven. I do all the same braising and sautéing prior to the crock pot. It's the only "pot roast" I have ever liked, love it!

This is a delicious roast! everyone loved it. The gravy was really good. There was not much gravy left when the roast was done, so I added more beef broth. The roast was so tender. yummy!
Made mashed potatoes and green beans as sides.
    Thanks Giada.

Words can't describe how tasty this was! I've never made pot roast before, but this made me look like a pro. I had the same problem with only finding a 2.5 pound roast, but I adjusted the cooking time and it was great. I may try letting the rosemary cook in the oven or blend it fresh because I didn't like the needles with the smooth gravy. Other than that, perfect!
