I loved this recipe... it is a sure go to when I do pot roast! Absolutely wonderful. I found I had to add a bit more wine and a few more mushroom to make it really juicy and delicious!

The gravy on this roast may be the best I ever had! The porcini mushrooms really added such a wonderful flavor. I used Pinot Noir and it paired perfectly with the mushrooms. Pot Roast meat isn't super flavorful on it's own... I may actually try short ribs with this sauce next time.

Easy to make. Have made it several times. We like to make it with polenta so I increase the liquids to have extra gravy. Wonderful recipe

I made this for dinner tonight. Not sure if I bought an old roast from our local store, it turned out like shoe leather :-(. Thankfully I added potatoes and carrots so it wasn't a total loss, broth was amazing.

I made this and it was super delicious. My store did not have Porcini dried mushrooms so I used baby bellas. I sauted them first with the onion. The mushroom taste was there!!! Everyone loved this roast. Thank you Giada. I am going to make that yummy winter minestrone soup you had on the show Giada's Family Christmas... cannot wait to dunk bread in it.
You are my favorite - thank you for all your recipes.

I have a TON of recipes for pot roast, so was not really expecting a whole lot of difference in this one. BUT was I wrong!! The meat was melt-in-your-mouth good & the gravy was the best I have ever had! I do not have an immersion blender, so just used my hand mixer and it was fine. This is a keeper for sure!!!

ABSOLUTELY FOOLPROOF AND DELICIOUS !!! Passed it on to friends and family who all loved it too.
I did use a handblender at the end, then fried some chopped cremini mushrooms on the side which I added to the sauce at the very end, after I thickened it with some flour.
    A KEEPER !
