    Made this Christmas Eve. It won raves amongst my family, they couldn't stop eating it. First thing Christmas morning they dove into the frig for more!

    Super delicious!! I could not find any dried porcini mushrooms at my grocery store so I used a container of small shitake mushrooms- sliced. Roast was falling apart as I took it out of the pot and the gravy was to die for. Will add this to my list of regularly made dinners.

    This was so easy! Not only does it taste better than the status quo pot roast but it's flavor is smooth and sexy because of the porcini mushrooms. I had no issue with a thin sauce but chose not to add any additional broth while cooking. I cooked this in my dutch oven. This is a repeat meal for sure. Started with a berry vinaigrette salad. Served with a side of roasted rosemary potatoes, blackened green beans and crusty italian bread.

    Made this for Christmas and it was a hit. For the leftovers I added oregano, basil, shredded the remaining beef and served hot Italian beef sandwiches on a good roll for lunch the next day...should have made more beef because everyone wanted another sandwich.

    Perfect Pot Roast!!! We tried this recipe in the crock pot instead of roasting it and it came out so good!!!! My family loved and it.

    Made this for Christmas dinner and everyone loved it! I made it with pork and just thickened the gravy instead of blending. The left over pork made great sandwiches the next day.

    I made this recipe for Christmas dinner this year. It was absolutely fabulous. I didn't use a chuck roast since I am not fond of chuck. I used a leaner cut of meat and there was no fat in the pan to skim. Very good flavor in the meat and the mushroom sauce was excellent. I made it with the mushroom risotto with peas and roasted root vegetables. For once, I didn't get one complaint about the food. Everyone loved it. Plenty of leftovers, too.

    This was extremely easy to make! It took a while for me to find a pot roast so make sure you have enough time before your dinner party to choose a really nice piece of meat. The sauce was a little thinner than I would prefer but it could be that I missed the step of skimming the extra fat from the top before blending the vegetables together. My dinner guest enjoyed this dish so much he had 3 servings.

    Everyone in our family loved it! I cooked it right from your recipe exactly and it couldn't have been any better. The sauce was so delicious!It was a hit!
    Your Christmas in Aspen video and the menu was awesome. I also made the Panatone french bread recipe and they all loved it as well. From now on that will be a Christmas menu for our family. Thank you Giada!

    We moved away from the usual turkey or ham this Christmas. I served this to our family for Christmas dinner. I was a little worried about the potential reaction to the missing turkey or ham...they took one bite and everyone raved about the flavor! I couldn't find a chuck roast large enough...had to substitute with a rump and was still very tasty. The gravy was the best. This will be my only pot roast recipe. So easy and tasty!
