This Recipe was so good. I made it for my husband, who is a musician and he was leaving for a short tour today so, I made him a few snacks that would travel well.
Although, I couldn't find pancetta at the market so, I bought salame. Which worked just great.
( a little note: If you use salame, you won't need the olive oil in the pan, the meat alone will spill its oils, and just a PINCH of salt, salame is a salty meat
After wards, I still had a bit of the cheese mixture left so I made my hubby an omelette with the mixture inside before he left. Along with the bits of salame, I added turkey bacon for a little crisp, and sprinkled fresh ground black pepper with cayanne pepper for a little heat. It was AMAZING... Killed two birds with one stone...Breakfast and lunch for the road.

I found the baby peppers in a big bag at COSTCO. not expensive either!

To the earlier post who wanted to know what kind of peppers these are they are mini or baby sweet peppers. I found them at my local produce stand. If you ask your local vendor they can order them for you and maybe your grocery store will as well. MUST GIVE THEM A TRY...

Bonner, check with the meat department at your grocery to see if they carry pancetta. Often times it's prepackaged in the cooler where you find bacon but, again, the store can tell you. If they don't carry it, you can use bacon. I would buy a carton of whole milk ricotta. Also, if your store does not carry fresh parmesan which you can grate yourself, they should have grated in a carton available.
This is a really good recipe. My challenge was finding the right pepeers.

This was very easy and delicious. I didn't exactly follow the recipe...I think this recipe is easy to stray from and still get a good result. I just used what I had on hand so here's what I did:
Fried onion and then added some garlic. Then added frozen mix of veggies (peas, carrots, green beans and added Quorn ground beef (fake meat. Then I added it into the cheese and ricotta mixture (I used parmesan and feta and then added in dill and maybe some basil. Then season it with salt and pepper (I actually used sea salt and stuffed regular peppers. Then I put the regular stuffed peppers in a baking dish and surrounded it with the leftover stuffing and grated some parmesan cheese on top. Then I baked it for the time Giada said and voila. Delicious.

This recipe is a HUGE hit! I've made it quite a few times, and everyone loves them. It's hard to plan in advance though, I can't always find the baby peppers when I want them, even at Whole Foods or Sprouts.

I made this for dinner and used cubanelle peppers instead. I will use this recipe again for sure!
