I was a bit wary about this one since stuffed mushrooms are usually so greasy, but we had guests coming and the original appetizer idea fell through (forget what it was, so I looked up recipes for mushrooms here and this one turned up.
I'm happy to say that it's not greasy at all, what with the bread crumbs and no cheese other than parmesan/romano. I tried another recipe later that called for Boursin and it was the same gross greasy stuffed mushrooms I remembered, so I came crawling back to this one and impressed another group of guests.
I used dill instead of mint, though, since I can't get enough dill.
Really easy and cheap, too. Great for a bigger party as you could get trays ready in advance.

I made these for my bf and his mother and they loved them! I wouldn't suggest using olive oil to coat the pan though. It got too hot for it. I used a butter that had garlic and herbs in it to coat the pan. OMG sooo good! I recommend this recipe to spice up a main dish or for football Sunday! I was thinking of chopping some artichoke hearts into the mixture!

I followed the recipe pretty close except I needed to substitute some panko bread crumbs because I ran out of the other. I may have used a little extra romano, but why not? None the less they were excellent and most everyone at the party that tried one wanted more. Also the smaller ones tend to go quicker as people loke to just pop them in there mouth.

Delicious. Not the best stuffed mushrooms I have ever had, but certainly a crowd pleaser. I doubled the recipe for a large dinner party, and they were all devoured within 10 minutes of being out of the oven. Even the children loved them! The mint in the recipe gives the mushrooms a nice kick without overpowering the savory flavors of the rest of the dish.
If you are looking for a easy and delicious stuffed mushrooms recipe look no further!

I love these. My problem is that I want to take them places. By the time they get there, they aren't as great anymore. So if you make them, eat them quick!

I make these all the time. People always love them. I use a lot of olive oil so they don't dry out. I also end up making a little more stuffing than I need, but I like to make sure the mushrooms are really full. Everyone always loves these, it's my stock appetizer to bring to parties.

Even my boyfriend... who does NOT like mushrooms.... likes these. You can also modify them adding or changing ingredients. It's a versatile recipe. Another good one to have in the cook's repertoire.

My husband was hungry for stuffed mushrooms, so i browsed the recipes. i came upon this one and tried it. I cut this recipe in half, followed it all the way through. It came out tasty and moist. They didn't turn out dry like some people said, and I didn't have to add any tomato sauce to keep this moist. This is a definite keeper. My husband can't to have them again!!!!!!

....add some can tomato sauce to your stuffing mix...enough to make it moist before stuffing them...mmm mmm delish!!
