As someone who has never really had stuffed mushrooms before, I thought they were pretty good and very easy to make. I still think you could add a little more flavor to the stuffing to make it even better.

I absolutely LOVE everything that I have made from Giada's recipes, until now. This did not have much flavor and the mushrooms were a bit too "crunchy" for my taste. I put them back in the oven (with more olive oil to try and soften them up, which helped a little but this still was my least favorite.

The stuffing was gritty like sand. Needs more salt and/or garlic.

You definitely want to use white button mushrooms... I used the brown cremini, and they turned almost black when baked. Pecorino Romano is very salty, so don't use any additional salt. The mint is a nice touch. Ease up on the olive oil too. It is better to undercook than overcook, because the mushrooms get too soft. My guests ate them all eventually, but they were not a hot item on my buffet on Christmas day.

I leave the mint out (personal preference but they're great that way.

I made them for my family and everyone loved them. Even those who don't like mushrooms enjoyed these little guys.
