I made these last night for our gourmet group. People said they liked them, but my husband and I were really disappointed. We thought the filling had a gritty texture and tasted like nothing but crumbs, even though I had used a very flavorful high quality pecorino. On the positive side, they are very easy to make, but I am surprised by the ratings and would not make these again.

Two words... "Delicious" and "Simple". My husband and I absolutely LOVE this recipe!! It comes out wonderful no matter what type of cheese we use. We've substituted plain old grated parm, swiss cheese and usually have fresh thyme in the fridge so that gets thrown in instead of the fresh mint. Since it is normally just the two of us, we cut the recipe down to just a handful of mushrooms (eye-balling the bread crumbs, cheese, etc. so we are able to prepare them for the oven in literally a matter of minutes.

i've made these a few times and they're pretty good and easy. i've made it without the mint and substituted the fresh parmesan.

I liked the taste of these but the Itl breadcrumbs give it a gritty feel in the mouth that will result in me not making them again. Perhaps if you used a packaged dressing or Panko bread crumbs....

I had to make a Thanksgiving dinner for my family last night and wanted to make a quick and easy appetizer. After reading all the raving reviews I decided "this is it!" So, this was the first course of the meal and EVERYONE loved it, including my super picky husband. It was a hit! I thought 28 mushrooms would be too much for 6 people. Well, before dinner had started, they were all gone. I am going to make this over and over again! Yummolicious!

I made thiese Stuffed Mushrooms for a dinner with somefriends and I could only eat one of them, my friends loved them... The mint give them a very nice touch.

I followed recipe exactly and the filling came out very dry. So, I added 1 extra tbsp of oil. I was thinking maybe the moisture from the mushrooms while baking would help (which it did a little but still very dry in my opinion. But the filling did have a good flavor.
