I've made these 2 times so far and the second time, I did 2 batches. One w/ and one w/o the bacon and we all agreed w/o the bacon was SO much better. The first time, i followed the recipe but left out the bacon fat. I made a few adjustments for the second time. I baked them at 350° and added an extra cup of nuts, end result...the nuts were super crunchy. There was a lot less of the egg mixture left over and when I baked them at the higher temp, it helped to make them super crunchy. Definitely will be making these again!

This is the best snack recipe ever!! We have made it over and over and have to make double batches. It is so good it's addictive and was such a hit when we took it to a friend's house at Christmas that everyone wanted the recipe! Also, this snack is good with any beverage (doesn't have to be beer. We make it as the recipe reads with the bacon grease and all, no need to improve on a good thing!! If you want to make a hit at your Super Bowl party, make this snack. You won't be sorry!

This recipe is addictive and delicious. I read the reviews and did not use the bacon grease and substituted brown sugar for granulated. My husband loved, loved these nuts. I brought them to my parents over Thanksgiving and they were gone in a day. I will make these again and again.

Such a delicious and easy recipe! I used almonds, Walnuts, and Pecans, cause I had those around anyway! So good, nice mix of sweet, spicy and salty! The nuts end up with a great crunch to them! I would say they could work with or without the bacon! Big hit for entertaining!

Well, I made this today so it would be ready for the "late game", and I must admit, I did some tweaking (sorry, Giada!. First, I omitted the bacon grease on the cookie sheet and used parchment paper. Then, rather than use granulated sugar, I substituted unfirmly packed light brown sugar. Another change I made was to add pecan halves rather than walnuts. I was very careful to check and mix after each 10 minute interval and found that 30 minutes was sufficient. The added bonus was that once the egg white/brown sugar/cayenne mixture cooled, it came off the parchment paper easily as I crumpled it, so I just added it to the cooled, finished bacon-laden mix (waste not, want not!. Bottom line: YUM!!!

Easy, fast and delicious. I used chipotle powder instead of cayenne and used double. Next time I will use even more because my friends and I all like things spicy. Also will slightly reduce cooking time.

35 minutes is way to long for the nuts....burned mine at 27 minutes:-( still going to serve them cause I am curious what people will think of the combo. I agree with another...no need for the bacon grease. The sweet flavor is barely noticeable. I"ll try again with a closer eye on the nuts and perhaps a bit more sugar in the egg white.

I watched the recipe being made on air yesterday morning and I just knew it I had to make it for that evening when we had friends coming over. This was delicious, just be sure not to burn or over cook both bacon and nuts as there can be a fine line, 35 min was great timing for the nuts, they were perfectly roasted.
I added a tiny bit more chili, the whole bowl was gone by the end of the night, i will make it again for sure.

Was a big hit at the Saturday night football game!!!! Next time I make it I will not use the bacon grease and try butter or parchment paper. I think it would make the sweet coating on the nuts stand out more. I started to double the recipe but there is no need to...makes just enough with no left overs and your guest wanting to have the recipe!!!!
