Delish! Made this for a party I was hosting and it was the favorite of everyone there! They especially loved the Mayonnaise!

Simply delicious! I only used one large sweet potato for 2 people. Plenty. I cut it into medium thin 'stick's, tossed them with olive oil on the cooking sheet. Do not peel first and make sure the pan is large enough so they don't steam. When they came out of the oven, 40 minutes later they were crisp and creamy. Not soggy. I did not make the aioli but sprinkled Mojito Lime Grill Mates seasoning from McCormick's after baking.
Really, really good. Next time I get some basil, I will make the aioli.

I read other comments about them coming out soggy and to use less oil. I cut my potatoes fairly thin and put them on a pan and sprayed a little olive oil on them. It didn't help...they were soggy and I particularly did not care for the mayo dip whatsoever. I ate a few with a fork and threw away the rest. Definitely would not make again.

These are so amazing! My family loved them! The garlic mayonnaise is really good too, and goes really well with the fries. I was surprised because my brother hates mayo but he loved it with the fries. Will make again !!

These fries tasted amazing especially with the mayo. My only complaint is that they were not crispy at all ... pretty soggy actually ... but again ... they tasted amazing!

I had not tried to make sweet potato fries before, and these were very tasty and easy to make. I used 5 medium sized sweet potatoes and it made enough for 5-6 people. I also only made about 1/2 cup of the dipping sauce, and there was still plenty of that left over. To lighten it up, I used 1/4 cup light mayo, and 1/4 cup fat free plain greek yogurt. Just made it a little healthier and was still really good! With the garlic and lemon, you couldn't really taste the yogurt.

I've been baking sweet potato fries for a while and was looking for a dip to go with them. This one works great! I used dried basil because I never have the fresh stuff on hand.

The recipe was pretty quick and easy to make especially because I used smaller portions of everything. I fried some of the potatoes in vegetable oil and also baked a handful. The garlic mayonnaise was very tasty and fit perfectly. Will def make again for family and friends!
