    As my daughter said, "Well at least now I know that I do not like basil and salt and garlic mayonaise on my sweet potatoes" I have to agree with that.

    I love sweet potatoes, so enjoyed the taste, but the texture was very soggy. I even tried putting them in the oven to crisp up, but it didn't help.

    I have been making sweet potato "fries" for years and from past experience have found that if you use too much olive oil they will not crisp up. If you have one of those spray bottles for oil use that. They come out great.

    Whether mushy or crispy (and I ended up with some of both these sweet potato fries are DE-LISH-IOUS! I cut my potatoes to look more like carrot sticks, bathed them with equal portions of melted butter and olive oil, crowded them on foiled lined cookie sheet(Reynold's Wrap Release non-stick foil is the greatest, generously salted with kosher salt, and cooked for about 45 minutes. I only cooked 2 good sized potatoes, but wished I'd cooked more. My fries carmelized, which made them taste like candied sweet potatoes... mmmm-good! I don't know why some turned out mushy and some crispy, but either way we LOVED them! I didn't use the basil salt or the galic mayo... after tasting them, I'm glad I didn't, because they didn't need anything to enhance their flavor. I can't wait to buy more sweet potatoes to make them again!

    Made these tonight for my family...what a huge hit! The sweet potatoes were fabulous with the basil (next time I will add even more basil and the aioli was delcious! Great idea to pair basil with sweet potatoes!! A real winner Giada!! Thank you!

    This was very tasty. The garlic mayo complimented the sweet potatoes exceptionally, but I must agree with other raters that the sweet potato fries came out a bit soggy. Maybe I did something wrong, but I did try to follow the recipe to the exact word. I still ate it, though, and though it was pretty good.

    My husband does not like sweet potatoes but when i made these he ate every last one. Surprisingly it was a winner with my girls. 4 and 3 years of age.

    I scaled the recipe down because I was cooking only for myself. Because I eyeballed the oil, I think I put too much, the "fries" came out a little limp. I poured off some of the oil and popped them back in the oven to brown up, but not until I had taken a few to test. These are really very tasty and the sauce is yummy. I will probably make these again.

    In the picture, Giada's fries are very thin. Maybe all of the people whose fries came out soggy/mushy are cutting them to large.
