These sweet potato fries were so yummy! I'm going to make them again and again! The Basil was a lovely touch and the garlic in the dipping sauce gave the perfect kick!

Tried this recipe with both the instructed temperature and 450F and couldn't get the crunchy texture. They both came out a bit soggy and soft even with adjusted reduced time. Perhaps the yam just has too much moisture to begin with? Would love to try that again though.

My kids and I watched Giada and wanted to try this. They hate sweet potatoes. I thought I would give it a try. I chickened out. I tried my old recipe with just lots of italian spices and cooked the sweet potatoes in the oven. This kids did not each them ,but I was expecting that. My husband liked the Mayo dipping sauce. I don't think I will be trying this again. I was hopeful that they would eat their vegetables.:(

We love this recipe. The sweet potatoes get almost carmelized if you leave them in long enough, but watch that they don't burn. Have made the mayo a few times but tonight just mixed together EVOO, garlic, hot chile flakes and fresh basil. Healthier than mayo and a nice dipping sauce. We eat sweet potatoes at least twice a week!

I had some left over sweet potatoes that I needed to use so I decided to try this one. I did not use the basil salt on it simply b/c I didn't have basil. I have no idea how people got these to crisp up in the oven. I liked the mayo though. If I try to attempt sweet potato fries again, I will deep fry to crisp. Maybe if you do a breading on them they'd be crisp out of the oven???

I made these "Fries" for my family tonight. My husband and son LOVED them. The mayo/garlic dip was out of this world. It really make the fries special. Of course, good thing we all had the dip :

I tweaked this a bit - dusted the fries with kosher salt, fresh cracked pepper, and some Mrs. Dash southwest blend for some heat - and they were delicious.
Only problem is that they didn't crisp up unless they were burnt. But still tasty.
I forgot the lemon in the mayo (was throwing it together quick from memory but it was still tasty and really a good compliment to the fries. I was surprised because I kind of thought it wouldn't be that good.
