When these came out of the oven, they didn't appear crispy. However, when we tasted them they were excellent. We'll make them again and again. We did this without the sauce - they are just fine on their own.

I made these last night with turkey burgers. They were SOOOO good! They didn?t get as crispy and firm as regular potatoes do, but they were still fantastic! The mayo dipping sauce is also really good! I think it would be good on sandwiches or burgers as well as a great dipping sauce. I will make these recipes again and again! Thanks Giada!!

I read most of the reviews first. Can't imagine why anyone wouldn't like the mayonaise dipping sauce. Not sure how your potatoes would be mush either. In general, I have never had sweet potatoe fries that weren't a bit softer then regular fries so I didn't expect them to be really crispy. They were wonderful. Trader Joes has the sweet potatoes already cut for you so I used them. Ours were done before the time was up. We loved them and wish we had made more. We were just doing a trial run because I'm making them for company tomorrow. I can't wait.

I loved all the flavors in this recipe. I followed all the directions but my fries turned out very limp and not crispy. However, they were so good, I will try again!

These were really easy to make. Just make sure they are spread in an even layer so they cook thoroughly. But so good.

I loved this recipe, even my picky husband enjoyed these. However, the recipe calls for 2 teaspoons of kosher salt, that is WAY TOO MUCH, if you use regular salt you might be ok, but I would not use that much kosher salt again. I had to add almost another half cup of mayo to balance the salt, after that it was great! I would recomend trying to add the salt slowly to the mayo mixture until you find the salt level that is right for you.

The fries were great. However the salt was a little too much. I would use much less salt - if any at all. We love sweet potatoes and didn't realize how easy the fries were to make. I did not try the mayo sauce.

Very tasty! I'm not even a big fan of mayonaise but this dipping sauce is delicious! I will definitely be making this again :
