    I used angel food cake, as I didn't have any pound cake. I also warmed up the marscapone cheese, so it melted a little on the toasted ckae. I heated the apricot-amaretto sauce, sprinkled the toasted almonds on top and it was heaven! A perfect light dessert and ending to a great meal.

    When I toasted the pound cake in the oven until golden brown, the slices came out as hard as a brick. Are they supposed to be hard? We needed to use steak knives to cut the dessert. Flavors were delicious, and I'd like to make again, but perhaps next time I should use the toaster. Anybody have any other suggestions?

    This dessert is so very good and so easy to make. I made it last weekend for company and everyone loved it. As an fyi, I was only able to get 10 slices of poundcake out of the 10 3/4 oz size with each slice cut at 1/2 inch. Also you really don't need to add any honey to the mascarpone cheese as the amaretto/apricot preserves mixture was plenty sweet enough...of course it's up to individual preference. You can't go wrong with this recipe.

    My boyfriend and I made this as part of the entire chicken dinner on this site. WOW! What an incredible end to a great dinner! This was my first time using marscapone cheese to cook with. Very easy and flavorful. I stirred it up well in the container. I did not add honey as another reviewer did as we liked it's contrasting smoothness. I also added yet another glop of cheese to the top piece of toast and then more almonds. The almonds really add something to the desert. I pre-heated the oven. The toast doesn't look like it's cooking at first but right after the first 3 - 4 min. it gets this wonderful brown crust - now turn them & do the other side. We ended up having this for desert three nights in a row - no kidding! Where has this type of desert been all my life! I'm in heaven!

    This was the best dessert. I made this 2 nights in a row at the request of my husband. I normally don't like apricot, but mixed with the Amaretto it was amazing.

    Fairly quick & easy to prepare. Toasting the pound cake really give it great flavor. Added a bit of powdered sugar to cheese. Will make again.
