I've made this cake three. The first time I used the wrong kind of sugar for the frosting, but the second time was the charm!
The cake can kind of crumble if you don't let it "thaw out" after taking it out of the refrigerator, but if you cut it with a wet serrated knife it should cut fine.
As for the frosting's sweetness factor, it is pretty high, but my family got over it and still enjoyed it. If someone can figure out a way to reduce the sweetness a bit while keeping its consistency, then please share.
Also, I don't know if this happened with anyone else, but the raspberries actually made it taste sweeter. Perhaps it was just the pack I bought. It's likely that sour raspberries would balance out the sweetness of the frosting. Still, it was a very delish cake!

Talk about a sugar shock! Made exactly as recipe read. We are real lovers of raspberry and orange but will not make again. The cake is delicious, the frosting is undesirable. It seems perhaps the jam ?? (I used Smuckers thins the frosting and requires more - more powdered sugar to be added. I will make the cake again but with a different frosting. Too rich!

I had a bunch of friends in for a BBQ and decided to make this cake for the dessert. It was a big hit. Everyone did comment about it being 'very sweet' but that did not seem to stop them from asking for seconds.

Christine...I live in S. FL too and I'm from the Midwest, so I had to try this cake, although I don't usually use mixes. I used the Duncan Hines orange cake mix with 1C of fresh-squeezed oj and 1/3C water, as another poster suggested.

The oj flavor was not overpowering at all...in fact, I think all oj would have been fine. When I brought the 1 layer cake and 12 cupcakes out of the oven & tried one of the cupcakes, I thought it really tasted like a mix...but, when I frosted them the next day, the flavor had mellowed out.

I also had trouble with the frosting being too sweet. I used Greek yogurt because I had it on hand and another poster suggested it...that was a great idea. I just kept adding a little powdered sugar as I went along, tasting for sweetness...it still turned out too sweet for my taste...but, like someone else mentioned, it really worked with the cake...and the whole thing tasted pretty good to me!! I may make this again.

This was a complete mess. I'm an experienced baker and loved the flavors of the cake. I followed the recipe exactly, and the thing was a diaster. The cake complete fell apart and was all crumbly. The frosting recipe is messed up, way too much sugar for the amount of liquid you are supposed to add. I had to make mine very loose so it wouldn't tear apart the cake that was falling apart, and it was bad. I had to throw the whole thing out. I never use box mixes, this was an exception, now I know why I don't do that!

Saw Giada make this cake. I Had to try it. So, I made it for my Labor Day cookout. When I made the frosting and tasted it, I thought something wasn't right. I frosted the cake and served it. Everyone loved it. I tried it and was pleasantly surprised that the flavor combination was perfect. I am not one for different flavored cakes. I'm more of a chocolate or vanilla girl. However, I can't wait to make this one again. My disappointment today is that there wasn't more left over. My husband and I are fighting over the last piece.
