    Yum! This is a great staple for your winter menus! The vegetables all come out cooked perfectly and the crunch of the bread crumbs add a nice texture.

    To die for every single time I make it! It is phenomonal just as is, but I usually add an extra layer (or more sometimes of the tomatoes because that is my favorite part!
    The prep can take longer than 15 mins if you are not a super swift chopper, as I am not, but is beyond worth the wait.
    Even people who would normally turn their nose up at the mere mention of "Vegetable Casserole" will love this. The flavors are just awesome!

    Very good but it took much longer than 40 minutes to cook. I also had to add some liquid to it to help it cook. I probably cooked it for an hour at 450 and it still wasn't completely done. Will make again but start it earlier.

    All I can say is WOW. I am not a veggie eater unless it is covered in a thick fattening sauce, so I basically avoid vegetables. This is awesome. Great flavor, easy to make and a nice variety of vegetables. I was skeptical that a recipe can get a 5 star rating from so many people. Now I know why. If you're reading this and haven't tried it....try it....you will NOT be disappointed.

    FANTASTIC! My favorite is to use the leftovers the next day in a scramble for breakfast. Simply heat up leftovers in a skillet for a few minutes, add eggs, and scramble together. Delicious with fruit and bread for brunch.

    This was SOOOOO Yummy! I love to find new ways to cook all kinds of vegetables, because I LOVE my veggies, and this is my new favorite dish. I absolutely loved it. I did pre-bake my potatoes and carrots for 20 minutes before I added the rest of the ingredients. Just to soften them. And the Parmesan....OMG! Delish! Next time I will sprinkle some parmesan on the bottom layer to get the parm flavor all throughout the dish. I highly recommend, you won't be dissapointed. *** I also put foil down for easy cleanup :

    Our family and a dinner guest I loved it. We made a substitution (shitake and crimini mushrooms instead of zucchini only because I forgot to buy the zucchini,but we still found everything blended well and offered max flavor.
