    Delicious and Simple... I started cooking the pasta and eggplant and before you knew it I was DONE!!! Husband LOVED IT!! Must do this for my guests next time to Impress!! You gotta try it!!

    Was very quick, easy and delicious as well as presentable. Only 4 rating since I altered original recipe. I sliced the eggplant 1/2 inch thick and grilled it in a grill pan. This method requires less oil. Then gently cut eggplant into medium size pieces so it doesn't disintegrate when mixed with pasta. Adds a mild smokey flavor. Substituted spinach for the basil and added 1/2 diced fresh tomatoe at the end.

    i didn't like the way this looked or tasted, followed the recipe to a tee and it was blah and didn't look appealing at all sorry Giada this one bombed for me

    This one didn't work for us. Way too much oil, eggplant not cooked long enough. Normally I love Giada's recipes. This one, we did not.

    This was pretty good, surprisingly. Less a star because of the amount of oil suggested for pesto. I added 1/2 that and it was still a bit too much really. Also, as other viewer suggested, adding a can of drained chopped tomatoes added a brightness and flavor that really made a difference. Plus a dash of chili flakes and then it was perfect!

    My family really liked this recipe. The only reason I gave it four stars instead of five was because it didn't look very appealing. I used whole wheat pasta, but I don't think using plain pasta would make the sauce look any better. I would definitely make this for my family again, but I don't think I'd make it for company.
