I made this last week and immediately it became one of my favorite dishes I ever made... and my wife and daughter raved about it for days. I made it again tonight and it was so so... Not bad, but not what it was the first time. (Still better than Pizza... I'm sure I did something wrong. Also, I kept looking for garlic in the recipe, but there was none. I think maybe I did a better job blackening the sugar the first time.... I'll definitely try it again.

I wasn't a fan of this recipe. This recipe is too bland. The ingredients do not go well together. I made this for dinner tonight and ended up ordering a pizza.

Wish that I had read the reviews prior to cooking this recipe. Too much oil and my result was bitter because I probably over cooked ( burned the brown sugar. I will try it again being careful to correctly cook the brown sugar. Chicken was very tender.

As a born and bred Trinidadian I have to give Giada credit for trying her own version of Trinidadian stewed chicken. However, her dish falls short of the real thing because it's missing the fresh ground "green seasoning" that Trinidadians use to season and marinate their meats / fish before cooking. This green seasoning marinade is a blend of culantro (also known as recao or "bandania" or "shadow benny", green onions, fresh garlic, broad-leaf Thyme, and pimento peppers. If you took those seasonings, blended them in a food processor to create a wet marinade, seasoned your meat an hour before cooking and THEN followed Giada's recipie, your meal will be amazingly flavorful. Trust me...you won't regret it!

OMG Delicious! I just finished cooking this stew and it's already a new favorite! It tastes so amazing! It's not favorless at all like a few reviewers claimed. Maybe they didn't use good ingredients?? I didn't have potatoes on hand so I used 3 parsnips instead and I added a big spoonful of tomato paste along with the tomatoes. Those are the only changes I made to the actual dish. I'm also serving it over rice. The favor is so complex and hearty. Thanks Giada! It's a hit!

This is a good base for a recipe but definitely missing a little something- next time, I will definitely try chicken broth or tomato paste and perhaps cinnamon as suggested. It was lacking a lot of flavor- I think using just water was the mistake.

This is yummy!! I did change it up some....added a cinnamon stick and cayenne pepper and substituted parsnips for the potato and chicken stock for the water. I cut the recipe in half since I was cooking only for me, but will make a full batch next time to share with friends.
