Everyone in the family loved this dish, even those who would not willingly eat an artichoke. The only change I would make is to use a bit more ricotta, as my pkg of ground turkey was more like 1 1/3 lbs. Great flavor!!

This was wonderful! The recipe may seem involved, but it is manageable. I made the marinara sauce last week. Once that is done, it really doesn't take that long to put it all together. It makes such an ample amount, that I took a pan over for the neighbors, and still had enough for two meals at our house!

Used italian sausage in place of the turkey; added a little spinach to the filling and cut back on the red pepper (for my kids. Came out wonderfully. Will definitely make this again.

As many have said before, the recipe is a bit time-consuming but well worth the investment. I've made it twice now, once with frozen artichokes and once with canned, and both were delicious. I also use Safeway Select brand arrabbiata sauce (in a jar, which is just spicy enough for my taste and complements the turkey, parmesan, and herbs beautifully. My family doesn't miss the pancetta one bit.
Safeway's bottled pasta sauces are really good, and really great time savers. They don't have any binders or fillers, just tomatoes, olive oil, onions, garlic, seasonings, herbs and, in the case of arrabbiata sauce, hot red pepper.
Right now I have one casserole dish in the freezer and the leftovers of another in the frig. The leftovers don't lose flavor or texture, even after being reheated in the microwave.
Great flavors. Foolproof recipe. Can be made ahead. Simply perfect.

Everyone loved this I used spinach instead and it was great. I sent a batch over to my sister in law since shes always busy and she loved just putting it the oven and not having to do anything. It looks so nice when its done definately will impress I added a little sage to mine which I thought complimented the turkey great. Will do again but as big batch since it is kinda messy to fill the shells but well worth it.

This recipe was more time consuming than I thought it would be. My grocery store had "jumbo" shells, but they were not Barilla and were not very big. I fill a 9x13 pan, but did not have enough for another pan so I stuffed the rest in the pan, which only means leftovers that we can dig into for lunch. I used 6 cups of sauce and extra cheese because my family likes the extra. Also, since I do not eat pork, I used turkey bacon for the pancetta. I'm sure it changed the flavor, but it was still good. The pepper flakes did not seem to be over the top hot like I expected based on other raters; I found it to be a nice blend of heat. I would make this again.
