I made this recipe exactly to the T, except for cooking time (I found that 10 min was more than enough, you just want to brown and melt the cheese. It was by far one of the simplest, healthiest and most delicious recipes I've had. Made it 2 extra days in a row after that and had friends for dinner. That's how much we loved it! The second time around used egual parts of sour and cream cheese (as some reviewers mentioned, but I'm sorry it does take away a lot from it. Spend the extra $$$ on the mascarpone because it very well is worth it! Can be made the day before (which I did. Thanks Giada!!

Yummmm...Kids loved it. Thank you for the tasty recipe! I didn't have Mascarpone cheese, so I substituted sour cream instead. Taking the advice of another review I baked it for 20 minutes. It came out great!

I made these last night. They were easy, relatively healthy and tasted AWESOME! These will definitely be replacing something else in the regular rotation. I followed the ingredients and directions exactly (except I thought the cook time was too long, so I shortened it. Winning!

This recipe is incredible! This is the second time I've made it and my family loves it!I love how Giada shares recipe's that are healthy and tasty. I pulsed my spinach and onion in the food processor before cooking them so that my son would enjoy the flavors and not turn his nose up at the veggies. This will be a staple in our monthly meals, better than taco night!

What a hit!!! I am typically not one to leave reviews or comments, yet couldn't resist after making these. I sent these to the police station where my fiancé works and he told me officers kept asking him what restaurant he ordered dinner from! I also edited this recipe since I was using what I had on hand. I used cream cheese, frozen spinach, and half a can of refried beans. After I read reviews I chose to add more seasoning as we'll which included garlic powder, a tad more cumin, and a bit of cayenne. I will certainly make these again and will also shorten the bake time as other reviewers have mentioned. Yummy!!

I made this tonight. It was amazing. I couldn't stop eating the turkey mixture while stuffing the taquitos. I added extra seasoning based on the previous reviews. I added garlic powder and adobo, I also used pinto beans because I didn't have black beans. It took me awhile to prep the recipe but it was so tasty it was worth it.

Saw the show and figured it seemed pretty easy ... It was! And very tasty. I added a little more seasoning to give it more flavor and to give it a little kick, I added red pepper flakes. I didn't have any black beans or mascarpone cheese. Instead I used a can of pinto beans, 4oz sour cream and 4oz shredded mozzarella cheese. If I had all the items the recipe called for I would have used them. All in all, it turned out great! This also coming from my husband who loooooves Mexican food!! Will definitely make them again.
