I made this recipe for the second time tonight. The first time, I followed Giada's recipe to a tee and didn't love it-I liked it, but it wasn't the best. I realized I don't like "herb de provence" seasoning, so I left that out this time. Instead, I used a creole seasoning that I had in the pantry and it gave the soup a nice kick. Also, instead of adding rice to the soup to cook further, I simply put a scoop of rice in a bowl and poured the soup over it. Lastly, I added some fresh corn (cut straight from the cob, and some steamed string beans I had left over to the soup...It was sooo hearty and delicious!!

Usually Giada recipes are some of my favorite. Funny, I followed this recipe exactly which is very unlike me. This soup was good, but not great.

I've been curious about Kale, but was afraid to make it. Other reviewers who tried Kale for the first time in this soup encouraged me to do so also. Since I had leftover turkey breast, I decided to try it and WOW! Decilious. I used fire roasted diced tomatoes and just eyeballed the rest of the ingredients and it turned out yummy. Even my picky son liked it.

Made this soup tonight for dinner. The turkey is a lighter meat than beef and works well in this soup. I did use a whole pound of ground turkey. I love kale and it was a great addition to the soup. Next time I might add garlic, although the soup had a great flavor. Can't wait for leftovers tomorrow!

This soup was super easy and packed in such a powerful punch of complex flavors. Definitely a great comfort food dish like when your sick or needing a hearty meal. And this was my introduction to kale and now I love love the vegetable. I have used collard greens as a substitute when kale was out of stock at my grocer; it didn't sacrifice flavor but you miss out the texture of the crunch!

I've seen this recipe before but didn't try it because it just didn't sound very appetizing. But then I saw it made on Giada at Home and it looked very good ... and it is!! My whole family loved it and it was our first time trying Kale!

Even though I have never been a huge fan of ground turkey nor have I cooked with Kale I thought this dish looked delicious on the show. AND IT WAS. My husband and I could not get enough of this soup - so easy, flavorful and healthy. I made it exactly as the recipe was written, and it will be a staple! The Herbs De Provence is a must - enjoy!!

Awesome!!! A great and healthy soup. The second time I made it I used celery instead of green peppers and it was just as good. I did have to use about a cup more broth after is simmered a while. Also "Birds Eye" has brown rice in the freezer section that makes this recipe even faster. Plus that rice is really good. This has been added with my other favorite soups. Thanks Giada!
