My family loves this soup! I've made it several times now and always make it exactly as written. In my opinion, the Herbs de Provence MAKE THE SOUP! I can't imagine making it with anything but! A BIG THANK YOU for adding the nutritional info. which was not there when I originally printed the recipe in Jan. 2012PS: I remember paying quite a bit for the Herbs de Provence at Williams-Sonoma, so am so grateful to finally be using them!

WOW! I've begun eating with no wheat (not no carbs. This is a very easy, yummy, super healthy soup. I was surprised that the taste was so good seeing as I am a salt addict and yet followed the recipe exactly. The Herbs de Provence really make it! Thank you Giada, as always your healthy meals satisfy me!

Yummy! I had turkey and kale in the fridge and was looking for something to make with those two items. I did a search and came up with this recipe. So glad I found it - most definitely a "keeper" as I will make this soup again and again! I used fire roasted tomatoes and Italian seasoning as I didn't have "plain" diced tomatoes or herbs de provence, and cooked "sprouted" brown rice which gave it a bit of extra texture.

I'd been wondering what to do with that leftover turkey in the freezer when I fortunately came across this recipe. We've been on a "let's eat better" kick as of late, so Giada's inclusion of greens in this dish sealed it. Without exaggeration, this was one tasty, beautiful meal that was as healthy as it was delicious. It's hard to believe you can create something so good with so very little effort. Needless to say, it's a great way to take the chill off of a gray, cold, February day. Especially if you have a little wine handy :

This soup is delicious and healthy!!! I made some adjustments to suit what I had handy, and to boost the protein content. I used ground chicken instead of ground turkey, and I used quinoa instead of brown rice, and spinach instead of kale. I also threw in some cannellini beans and some minced garlic. My whole family-1 yr old and 3 yr old too- loved it! Will make again! Thanks Giada!

I subbed italian seasoning for Herbs de Provence and zucchini for red pepper and it was still great! HUsband, 19 month old and I all loved it!

So Good!! will continue to make this!! Couldnt find herbs of provence,used Schilling Italian Seasonings, seemed to work fine...Because that soup was delicious.

Very good soup! I like soups that have both protein and veggies. The herb de provence is quite strong, I may start with a smaller amount next time, but it is a unique and warm flavor. I didn't add the rice because we are cutting carbs. I think it would be good with turkey sausage too. YUM!

OUTSTANDING was the word my husband used about this soup! My 15 year old son/soup lover also thought it was great. My other kids thoughtt it was good. I always try to make the recipe as written but the store was out of ground turkey so I used sweet Italian Turkey sausage instead. Otherwise as written - I love the Herbs de Provence and was afraid that might be the dealbreaker with the kids but they liked it too:- Will definitely make again as any time I can sneak Kale in the deal its done.
