This soup is yummy. I recently joined Weight Watchers and cannot believe how low point this soup is. I only used one TBS of oil and had to sub swiss chard for the kale because my market was out of kale. But other than that, I followed the recipe exactly. So delicious and you don't have to feel guilty for having more than one bowl.
If you don't have herbes de provance, italian seasoning can be subbed without changing the taste much. I bought the herbes de provance special for this receipe because I'd never cooked with it before and it tasted exactly like italian seasoning to me.

Turned out sooooo good! Defiantly need to measure the herbs as 1 tablespoon they are pretty strong as she mentions in her episode. I did add a couple shakes of red pepper flakes…. I always like a little heat! But great, healthy and perfect I am bringing it to lunch for the next couple of days!

we left out the rice and added extra kale and red pepper flake. this was one of the best comfort foods i ever.ate i loved it so much i called dibs on the left overs which were even better the the first day

This soup was AMAZING! My husband (who normally hates tomatoes and kale loved this soup. It was very easy to make and was delicious!

Delicious! We just tried this out for dinner tonight and it was a hit. The broth was so flavorful and the brown rice made it satisfying and able to stand alone as a main dish. The kale and parsley kept it feeling fresh and healthy. We're definitely adding it in to our dinner rotations. Thanks, Giada!

After watching this episode with my 8 year old yesterday she couldn't wait to make it. As much as I LOVE Giada's recipes I was a little unsure because I am not a fan of herbs de provence or red bell peppers but who was I to discourage my daughter from wanting a meal with kale and brown rice. I followed the recipe exactly and we both LOVED it! The flavor was amazing and it turned me into a fan of both ingredients I always shied away from. Thanks again Giada for another fabulous, easy and delicious meal. We have just enough left overs for lunches tomorrow and then my daughter wants me to make another pot so she can take it to school all week.l :

Very very good soup. I made it for dinner this evening, and my whole family liked it. My husband is usually skeptical about "healthy" food, but he said this was very good. Thank you, Giada! I have been trying to incorporate Kale into our diet because it is so good for you, and this recipe was excellent!

Awesome recipe!! I added garlic and celery and a little fresh thyme. I also added more liquid and cooked the rice in the soup as other reviewer suggested. Will definitely make again!
