    This soup was so easy, and oh so flavorful! Wonderful to pack all week for healthy lunches. I will make this a staple!

    I've seen this recipe before but didn't try it because it just didn't sound very appetizing. But then I saw it made on Giada at Home and it looked very good ... and it is!! My whole family loved it and it was our first time trying Kale!

    Even though I have never been a huge fan of ground turkey nor have I cooked with Kale I thought this dish looked delicious on the show. AND IT WAS. My husband and I could not get enough of this soup - so easy, flavorful and healthy. I made it exactly as the recipe was written, and it will be a staple! The Herbs De Provence is a must - enjoy!!

    Awesome!!! A great and healthy soup. The second time I made it I used celery instead of green peppers and it was just as good. I did have to use about a cup more broth after is simmered a while. Also "Birds Eye" has brown rice in the freezer section that makes this recipe even faster. Plus that rice is really good. This has been added with my other favorite soups. Thanks Giada!

    Love this soup! I used Trader Joe's chicken sausage with sundried tomatoes instead of ground turkey. I made a large batch of the chicken sausage with vegetables and used part of that for a pasta dish (added pasta and a little tomato sauce for the pasta dish and the other half (adding the broth, brown rice, and kale for this soup.

    My mother has recently had some health issues specifically with salt consumption. So I had been looking for healthy things to cook for her. Well, when I found this soup I was like this is it. The only changes I made were no calorie spray olive oil and no salt veggie broth. She loves this soup soooooo much and I do too. Its hearty and guilt free. I fix it every week for her along with other thing that are super good for her. She had made great progress. Thanks Giada

    Delicious and healthy soup! I'm surprised Giada didn't include any garlic though, I think I will add some next time. Also make sure you really use a big pot so you can fit all the ingredients. It may look like 4 cups of broth isn't going to be enough but I only needed to add maybe 1/4 cup to 1/2 cup extra after the simmer time but I prefer my soup a little less thick. Also I only added 3/4 tsp of salt as Giada always tends to over-salt her dishes. Overall a very easy and yummy soup, will make again!

    I love this soup! Healthy, hearty and delicious. Perfect for cold, winter weather. Some changes: I use a mix of shallot/onion/garlic, add the uncooked rice with extra stock like others, and cook almost an hour. Easy to make and very versatile if you want to change out some ingredients. I've made it before with turkey/veal and mixed greens like mustard/collard/turnip. Great as leftovers, almost tastes better. Serve with nice hot, crunchy bread!
