I love this soup! Healthy, hearty and delicious. Perfect for cold, winter weather. Some changes: I use a mix of shallot/onion/garlic, add the uncooked rice with extra stock like others, and cook almost an hour. Easy to make and very versatile if you want to change out some ingredients. I've made it before with turkey/veal and mixed greens like mustard/collard/turnip. Great as leftovers, almost tastes better. Serve with nice hot, crunchy bread!

Super tasty, super easy. Like others, I substituted onions, used more veggies, more turkey, more broth. Ultimately, turned out fabulous! Will definitely make again, and again, and again! Thanks G!

This soup was delicious! It was a fast, easy, and healthy soup and lasted most of the week for our lunches. The only things I changed was that I used onions instead of shallots, added more broth, added more kale, omitted some of the salt, and added uncooked fast-cooking brown rice directly to the soup. I will definitely be making this again...

My husband and enjoyed this soup, but when telling the kids we were having leftovers the next night...they opted for cereal. They loved it on night one, but I guess I pushed it trying to get them to eat it two nights. Yummy and very hearty!

This soup was delicious! I made it last night for the first time and I will definitely be making it again. I added a little bit more ground turkey and also a bit more broth. Another winner Giada!!!

Very tasty! The first time I made it I did it exactly as the recipe says and it was great! The next time I made it I added cannellini beans to add more protein and used chicken breasts. Herbs are a big help in this. Love it!

I am so not a soup person but wow, I LOVE this soup! I had been wanting to try kale for a while and am always looking for more recipes with brown rice. This was so yummy I'm ready to move kale into our rotation. I used cubed rotisserie chicken instead of the turkey and didn't add the herbs. This was perfection!

Crazy good soup! I made some substitutions (sweet onions, italian seasoning and frozen chopped greens and it turned out so flavorful, delicious and very filling. My husband asked for it again, and he rarely asks for soup for dinner! This recipe is going into the rotation.
