Wow, this was delicious! I followed the recipe exactly, including using turkey cutlets. I did add a small drizzle of balsamic vinegar to the arugula along with the olive oil, salt and pepper, and that gave the dish very good flavor.

Very easy to make, simple ingredients...and healthy too! Quick enough for weeknight dinners, and elegant enough for company.

Made this for dinner last night and everyone enjoyed it however the comment I got back was maybe a sauce on top would be nice - like a pesto with tomatoes.

I made the recipe exactly as stated except I used chicken instead of turkey because there was no turkey to be found in our grocery store.

Quite tasty and pairs nicely with the Bacon & Pancetta Potatoes which I also made.

Just so you know, the ingredient list and recipe differ from what she is using and doing on her show. FoodNetwork.com does this sometimes, so cooker beware. I am watching the show right now because of this issue. It may not make much of a difference, but sometimes it does. I had a recipe fail miserably because of this!

This dish was easier to make than I expected, and the result was delicious. My husband said this was "comfort food" to him. I used turkey tenderloins and cut them in half each direction and pounded.
Not a company dish but a definite repeater.

Made this tonight for dinner (substituted boneless chicken breast and was delighted how easy and delicious this dinner was! I also breaded the chicken using tongs (like Giada did and am ashamed I never thought to do that! No more big giant breaded fingers for me anymore! I highly recommend you try this light summer meal!

This recipe is yummy, light and easy. The turkey was delicious! I added pine nuts to salad before putting the turkey cutlet on top. Great light summer dinner. Does not seem to heavy since the cutlet is on arugula. I just bought turkey cutlets at the grocery store and didn't pound any thinner, they seemed thin enough from the store.

WOW, this was fantastic. A light taste, but what a taste! I made it exactly as Giada suggested but my turkey might have been a smidge thicker just due to running low on time and patience to pound it super thin. Amazingly easy and great tasting. Even my picky 2 year old loved it! I will keep this a family staple and go-to recipe. Thank you (again! Giada!
