This salad was so delicious! My husband enjoyed it too. Each ingredient added a component of taste and texture. The red onions added color, crunch and a wonderful sweetness. I also added broccoli that was lightly steamed (just long enough to enhance the colorand enjoyed the addition very much. The lemon and olive oil dressing is light and refreshing. The beans and shaved parmesan added a creamy texture and heartiness that made it a meal.

This salad was so crisp and refreshing and light and delicious! everything a salad should be! and the mixture of the beans and the green beans and the onions and the olives really filled you up more then just your regular ole salad!
You have to try this!

My husband and I loved this salad! We're not big fans of lemon in our salad dressings, so I used a bottled Olive Oil Vinagerette that I picked up at the grocery store. It was perfect with it. I also cooked my green beans about four minutes, instead of the two minutes it calls for. That's just a personal preference. This recipe is a definite keeper,like most of Giada's recipes!

So easy and healthy. I vary the beans sometimes, garbanzos, black beans, tonight it will be large white limas that I made from dried. Also the lettuce, sometimes preferring escarole for the slightly bitter flavor. If fresh green beans aren't available, or just don't look good, I'll use frozen. They retain the texture much better than canned and don't have the added sodium. For me the lemon is necessary. It compliments the parmesan in a most delightful way.

This recipe sounds delish; however, I live in a rural area where fresh green beans are not available this time of year (winter. For those of you who have made the salad, would canned beans (well rinsed be a suitable substitute?

Good side dish for a grilled leg of lamb. Go easy on the lemon so as not to overpower the dish. Nice fresh flavor and contrast of textures.
