    What a crowd pleaser. These potatoes were fantastic! I received rave reviews. One thing that I did different was I substituted bacon for the prosciutto. I felt that this was a mistake for the bacon never crisped even after 30 minutes of baking, so I would defiantly avoid doing this in the future. I can't wait until another dinner party to make these scrumptious potatoes again.

    Wow this recipe is perfect as a side dish. I was looking for something different to have as a side dish with steak and not the traditional baked or mashed potatos and man this recipe hit the spot. Definately a keeper.

    Absolutely delicious!!! Chopped the mushrooms finely along with the onions. Followed recipe except for prosciutto. Sooooo delicious. Vegets will love!!

    These are quite time consuming to make - baking them in the oven, scooping out the insides, etc, but they are delicious. I omitted the prosciutto as I don't eat pork & I added butter to the potato filling mixture before I refilled the skins. My husband & his friend loved them, they're great for lunch!

    We made these last weekend and will definitely make again. The mushrooms add a meaty filling into the normal potato and flavoring was excellent. We put bacon on top of our potatoes instead and they were just as good. Great job Giada!

    Made this today and it was a hit! I did leave out the prosciutto but I didn't miss it. Everyone ate it up, skins and all! No leftovers. I did cook the potatoes in the microwave the first time around. I just pusehed the potato setting then entered the amount. They came out the same way if I had baked them, but with a shorter amount of time. After I added the mixture I baked them for 20 minutes and they turned out delicious!

    This was so easy to make!!! I used diced crispy diced prosciutto and mixed it with the mixture at the last moment. I also made 2 mixtures. One with mushrooms and one with spinach for someone who cannot have mushrooms. Everyone LOVED it!!!!!

    Delicious. A little time consuming, but worth it. I substituted bacon for the proscuitto, just because I had it handy. I crisped the bacon and topped the finished potatoes with it. The great thing about this recipe is that you can customize it to your liking. Be as creative as you want.

    I'm making these for a second time in two weeks. My family raves about these potatoes. You cannot miss and they were actually fun to make. Thanks again Giada! My husband's and son's eyes lit up with every bite and I followed the recipe exactly.
