I often get Marsala dishes at Italian restaurants, but have been ordering them less now that I can make this great dish myself! I use chicken breasts pounded thin and dredged in flour. I also double the sauce and use two- 8 ounce containers of mushrooms (baby ports or half ports/ half white. To thicken the sauce even more and help it stick to the chicken, I have also added a little cornstartch/water mixture at the end. Last time I ate out, I decided against chicken Marsala because I decided I could make it just as well at home!

I tried this recipe substituting Madiera for Marsala because it's what I had on time. The flavor was good, but I think it would have been better had I used the Marsala. Overall, though, I liked it very much. I enjoy trying many of Giadia's recipes and I'm never disappointed even when I use my own twists. After all, a good recipe is just a starting point.

I used chicken instead of veal ... yummy! I doubled the sauce as many suggested and served it with orzo, roasted asparagus and fresh spinach salad. What a wonderful meal! Thank you Giada.

I used chicken and not veal and the recipe was great. I love chicken marsala in restaurants and never thought I'd be able to make it. The recipe is fantastic!

I used this recipe to make two different batches of marsala: chicken for omnivores, and mushrooms only (with no butter or cream for vegivores. It turned out very nicely in both incarnations. I did add a bit more marsala with the chicken to heighten the flavor of the sauce, but otherwise the recipes were the same.
