    this recipe was excellent! i used chicken instead of veal because it's cheaper. another money saving substitute i found useful was using safflower instead of saffron, it's very similar and a lot cheaper. :

    Fabulous. I had to change due to what I had, so used button mushrooms, Reisling wine, half n half and bullion broth. Even with all these changes, it came out superb. It's in my Favorite's Folder.

    This recipe takes a little time, but is well worth it. I could drink the broth it is so fabulous!! I usually use chicken and pound it until very thin. It is wonderful served with mashed potatoes. Definitely one of my favorites!!

    This recipe was great. Served it with spinach and ricotta tortelloni. The sauce went over both, with a sprinkling of Julienned sun dried tomatoes that gave it a kick.

    I made this for dinner. My husband said it was his favorite meal. I had everything measured before starting making this easy to do. I love to eat at Carrabba's. The cheif told me they only use Inglenook white wine in their receipe's. So I have been using it all the time. I also made this receipe with chicken one night and it was wonderful too.

    That's my only disagreement with the recipe, because it really was a sinch in preparation, and execution. This was my first scaloppini recipe and after serving it up just as listed, there is little I would change about it. The seasonings are quite perfect and the ingredients come together in an excellent array of textures and flavors, making it a most impressive presentation. Only one change i made out of necessity-- I used shitake instead of cremini since my local store did not carry them, but i imagine any similarly textured mushroom would do nicely, or even a mix. Also i used the smaller sweet peas instead of standard. I served this dish atop fetuccini with a sprinkle of flat leaf parsley and roasted garlic bread on the side. This was a real winner and I'll be making it again soon! Thanks!

    This was terrific. I made it last night for dinner, and my mother, whom is not a big fan of veal, loved the bite she tried when she stopped by. It is a very impressive looking dish; I loved the red threads of the saffron running through the sauce. It was very easy too, a great dish for company that seems like you went to a lot of trouble and really didn't. Also, super easy clean up as everything is done in one pan. Thanks Giada, this was delicious!
