    The only change we made was using Panko crumbs.

    I thought this was a great dish. As a vegetarian, I am always looking for new ways to incorporate veggies into my diet. I used zucchini and yellow squash instead of the fennel. I used all red peppers and roasted them in the oven, and used the grill pan for the rest of the veggies. I would suggest peeling the eggplant as it was tough. I would also use onions next time as I see some others did. Thanks Giada for the great dish.

    I love this dish. I've made it in summer with fresh produce from the farmer's market and in winter, with not-so-fresh from the grocery store. Either way, it's delicious. Grill the veggies on your grill pan until they start getting slightly brown or charred (not too charred, then they will not be too crunchy at the end. In fact, they will be crisp-tender. Perfect.

    Ladies for lunch loved this. Husbands loved the leftovers, too. The only change made was using one color of peppers (never green and peeling them after baking.

    This recipe has so much versatility and was absolutely divine! You can take a lot of inexpensive elements and make something truly fabulous.

    This was quick and simple to make. I grilled the veggies which added a smokey layer of flavor to the dish. This is cheesy and hearty, perfect for a cool fall day. We have been experimenting with vegetarian dishes and this one will definitely make it into rotation!

    Hi,
    was thinking of making this this weekend but adding layers of zucchini and substituting fontina for the mozzarella-just because I've used mozz a lot lately.
    How do we think this would taste?

    For having no meat in it, this dish was filling and delicious. The amount of cheese, sauce, and vegtables were just right. It was delicious and very easy.

    Giada, I love your cooking style and have sampled many of your dishes so I was excited to try this one. I had nice fresh vegetable from the farmers market and made the dish the way it was written on the recipe, using a grill pan. The casserole looked great out of the oven but the eggplant was tough, the peppers crunchy and the sauce was runny. It was difficult to serve neatly. Sorry, this one goes in the circular file.
