I made this and my family loves chicken, so I added flattened grilled chicken breasts. It turned out great. I did the veges and chix on the grill pan and it turned out fine.

Made this last night for a family dinner. Take the advice of the two previous reviewers and roast the vegetables in the oven. I grilled mine on an electric grill pan and it just didn't do the job. Even after 45 minutes in the oven the peppers and fennels were still a little hard. Otherwise it did have good flavor. I had mushrooms on hand so added them also. Will try again.

Made this for a dinner party last night, and everyone loved it. To minimize my time at the stove, I put the veggies in the oven for 15 minutes rather than grilling them. I didn't quite layer everything up in the pan the way the recipe calls for, but it still turned out really well. The cheese formed a really nice crust on top. I'll definitely make this one again.

I made this last night after catching a few minutes of the show - I did not have a grill but roasted the vegetables in the oven as suggested in the recipe. The dish had a wonderful taste - we will definitely make this one again and again!
