    I thought these sounded odd, but gave them a shot since I have liked everything I have made of Giada's. They were suprsingly good! I did have to make extra pancake batter to make 12, and my pancakes were not large enough to roll. I ended up folding them over like an omelet. This is a great way to use up any kind of leftover veggies before they go bad. I have tried a lot of Giada's recipes, and now keep mascarpone cheese on hand in the fridge. If you haven't tried it yet, it is well worth it. I will try this with crepes next time.

    I was a little weary of this recipe at first but was shocked with just how great it was. I made crepes instead of pancakes, which was suggested in an earlier review. The thin nature of the crepes added a slight crunch, which complemented the rich filling. I like them this way but have not tried them with pancakes. My husband ate these up!

    What a great idea for leftover pancakes. I just heated them a few minutes in the oven while it was preheating so they wouldn't be too stiff. I also sauteed the veggies a little longer as my husband prefers his veggies more tender, than crisp.

    The flavor of this dish is ***** for sure. Mascarpone is adding this rich, smooth flavor to it. The veggies are a perfect blend. Even spinach (which I don't like at alladds something special to it.
    Now, there are few tricks though.
    1. There is no way you can make 12 - 5 and1/2 inch pancakes out of that pancake mix in the recipe (1,5cups
    2. The pancakes are breaking up when rolling with the filling, so be carefull. The reason maybe that Giada is using only water with the Krusteaz mix (the box calls for eggs and oil, I don't know.
    3. Cooking the onions and carrots needs a lot more than 5 minutes to move on with the rest of the recipe, unless you like your carrots very crunchy.

    Just use your imagination girls with this recipe and be flexible it's gonna be worth it - I promise. It seems troublesome but it's way too good to give up on this one!

    Next time I'm gonna try this recipe only instead of pancake mix I'm gonna make homemade crepes and stuff them.

    Took a bit longer than I usually have for cooking, but worth it causethe kids ate their veggies!
