I have made this recipe 3 times now and loved it each time. It is a little time consuming to make but worth the effort.

I made this a couple of weeks ago and really enjoyed it. It takes a long time to make and much effort to prepare the ingredients but it makes a lot of meatloaf and it was worth the effort. My only compliant is that it didnt stick together. When I cut the loaf it just fell apart. I followed the recipe exactly.

Ok i love food and i love to cook, and this was fantastic! very much worth the effort, which i didn't mind. I made this recipe but didn't cook it in the oven till the next day. I put it in the fridge for the next nite's dinner. I took it out of the fridge about a half hour before putting it in the oven. I also added less spinach, about 1 cup, maybe less even, because that's all i had; and i think this may solve the mushiness problem i read from other reviews. I preheated the oven at 375 instead of 350 for 1/2 hr. I also let it sit for 20 instead of 15 min. to make sure it cooled enough so it wouldnt fall apart when removing from the loaf pan. I served it with a simple side salad mixed with homemade italian dressing and it went great.
Needless to stay, i LOVE this recipe and so did my husband who had seconds and then took more for lunch at work.

I am not into all veggies dishes but my husband and I decide to try this and were surprised at how good it was even without meat! I actually didn't even miss the meat in this great dish. We will definitely be making this again!

Ditto to all those who loved this as I did. As I am starting on a diet, I calculated the calories on this dish. If you serve this dish in 6 servings,the loaf is 404 calories and the sauce is 63 calories, just FYI for those who are interested.
