This was extremely good. It did take a little bit longer to make than I thought but was well worth the effort. Even my husband who is a meat and potatoes guy loved this. I will be making it again.

I loved this recipe! It took
longer than the time stated but
was well worth the wait - we're
having it again next week for
    a dinner party.

This is the first veggie loaf I have ever tried, and it was fantastic! My husband raved and ate two HUGE servings! He said he felt like he was at a five star restaurant!!! I added an extra garlic clove to the checca sauce, but other than that followed the recipe exactly. A little labor intensive, but WELL WORTH the effort! I feel like an Italian chef!!!!

My vegetarian parents loved this dish - it's a lovely alternative to the usual meatloaf. Even my daughter ate it...

I made this without any adjustments except that I put it in the Pampered Chef oval baker. It came out perfect! Very tasty and easy to make. Most of the time is spent cutting veggies. Even my boyfriend loved it(who normally thinks this kind of thing is boring. I think next time I will add more corn (because I love it! and will try it with frozen spinach to speed up the process.
I've given the recipe to all of my friends. Try it; you won't be disappointed!

This is the veggie meatloaf all others will be compared to from now on. Yes, it is labor intensive, but so worth it. The intensity of the flavors surprised me and the checca sauce is so fresh and tasty! Guaranteed I will be making this again! Giada I am so happy your mother is a vegetarian. Please share more veg recipes!!
