Such a flavorful soup! I disagree with the person saying "WAY too much" cumin. I actually sprinkle in a little extra! On the other hand, I've never liked fennel *seeds* so the 2nd time I made this I left them out.

I made a lot of alterations to this recipe to suit my family's taste, and it was very good. However, I give it four stars because that amount of cumin is WAY too much, in my opinion.

I used shredded chicken breast because I had it on hand, cut the amount of cumin, and used kale instead of swiss chard because we love kale. Added the sour cream and cheese on top, and it was very good. A lot of friends tasted it and liked it, too.

Great recipe..very flavorful and easy . Brought it to lunch one day at work and everyone was taking forkfuls... I substituted spinach leaves to recipe and it was wonderful.

    Super easy!

Subbed an extra can of beans instead of chicken, 3 cans of veggie broth, spinach instead of Swiss chard, and no fennel (didn't want to spend the cash. It made a great vegetarian chili!

It was a little spicy for my liking so I'll use less chili powder and red pepper flakes next time.

My father liked this recipe so much, he went back to the stove for seconds. For those of you who don't know him (that would be all of you!, that's HUGE. The change I made to this otherwise winning dish is the ingredients I used for the finishing touches. Giada suggests sprinkling parsley and parmesan cheese over the chili before serving, but I served it with cilantro, sour cream and raw onions in separate bowls so that people could dress their own chili. I found that the cilantro elevated this very Middle Eastern-flavored chili. Great dish!

I don't know why I doubted this recipe! I've yet to try a 'Giada recipe' that hasn't become my favorite. I wasn't sure the fennel seeds would taste great in the chili but all the flavors came together to make a delicious and light chili. Perfect with a warm crusy baguette!

The BEST chicken chili recipe EVER. I cannot imagine where some of you live that you cannot find ground chicken. I have lived all over the US and have never had trouble finding it.

This is a great recipe for a chicken chili... I did use more chili powder than called for but that is because I always use that much in all my chili dishes, we prefer it that way. Also used baby spinach instead of the chard. As for the ground chicken, it was my first time cooking with it, and I can see how the flavors (esp the fennnel are meant to go with ground chicken vs. shredded. So good! Thanks Giada!
