    I just made this recipe following it exactly except for the unbelievable amount of cumin that was called for. I only added 1 Tablespoon and I still feel it dominates the palate. I also added more red pepper flakes at the end because I like more of a kick. If I make this again, I will have to doctor the spice profile. I will say that I think the fennel seed and corn are a MUST for this dish. They add just a bit of sweet to balance the heavy savoriness of this chili. The chard is also a delicious addition and adds some texture.

    I followed the recipe exactly the first two times I made it, and it was delicious. The third time I substituted ground turkey for the chicken, spinach for the Swiss chard, and added a can (partially drained of petit diced tomatoes. I also added just a dash more red pepper flakes. Even better!

    Perfect! My whole family loves it from my meat-centric husband to my one-year-old baby. I've substituted kale, collards, and other dark greens for the chard with equally good results.

    I like most of Giada's recipes. I was looking for a white chili recipe (no tomatoes in the house. I decided on this recipe because it had so many positive reviews and I had used some of her other recipes with success in the past. I had misgivings about how the flavor of fennel seed would play in this dish, but I decided to trust Giada's recipe and the positive reviews. Well, looks like I should have trusted my instincts.
    This soup/stew was fair, but just because there are beans and cumin do not make it chili. The flavor is interesting...the fennel seeds (a whole TBS are an interesting addition...and ultimately I think it's what derails this dish. It's an interesting stew, but it is NOT chicken chili. So, like another reviewer said, "don't tell your husband you're making chicken chili" if you're making this dish. LOL

    My husband loves white bean chili! When I made this, I doubled the amount, only added about 1/2 tsp cumin, deleted the fennel and used rotisserie chicken to save time. I also added about 1 cup of white wine. It was very very tasty!!! I love this "white" version of chili and will surely make it again!!!!

    This is quite possibly on of the best chicken chili recipes ever!!!!! I had my doubts especially because of the swiss chard, since I was unaccustomed to. However, I have been making this recipe for at least two years, and am definately a fan now! I do omit the fennel seeds and add extra chili and cumin but that is about the only changes I make to this recipe. Excellent choice ,very filling, and surprisingly healthy.

    OMG it's going to be a long night because I just demolished a huge portion of this chili. Nothing short of awesome. I'll be cooking this again for sure!
