First let me say that I don't really like chili, but i had to make one for a chili cook off. And guess what, I just tied for first place! Everyone loved it - even me!! I used swiss chard and half of the fennel. This is awesome, definitely give it a try. My kids thought it was too spicy, so if you are making it for small ones, go easy on the spices.

Used 4 cubed boneless chicken breasts cooked with the onions and garlic instead of ground chicken. Also used 6 oz. baby spinach instead of swiss chard. Added red pepper to individual taste instead of red pepper flakes while cooking. Very tasty --- great tailgate recipe.

this recipe was easily halfed and the steps were easy to follow. the chili was very tasty, although i will use less salt next time. i highly recommend!

While I like the taste of fennel seeds, I thought it was way too overpowering in this recipe. Wish I had left it out! Also, thought the chili tasted fairly bland. I added a can of diced mild green chilis and that helped. Probably will not be making this again.

I'm not a fan a chili because I don't like kidney beans, but I love the flavor of chili. I'm found this recipe on food network searching for more ways to make white beans. I decided to make it and my family and children love it. My children ask for it on a regular basis and my children are very picky eaters so I stick to recipes they would eat often. This is a great alternative for "red" chili and those who don't like kidney beans. The white bean chicken chili has the same flavor as the red or original chilli this is a delicious chili love it.

I cooked this recipe yesterday and  was delicious! But I didn't use the whole amount of cumin, fennel seeds and oregano (it was to much for me. I used sour cream for serving. My 17 months old babies loved it and my husband asked me to cook it again :

I just freeze the left over and after a week defrost with olive oil and chicken stock and mixed with pasta. MMM so delicious.

I wasn't impressed. made me sad because I thought it would be a hit. It was bland and didn't have any taste. Had to throw away. Felt like I wasted $.
