This was fantastic! I added a couple of extra garlic and sprinkled a little crushed
red pepper. Gave it a little kick....

Super easy & simple to make but oh, so very delicious!! Great with pretzels or in a whole wheat wrap w/spinach leaves for a very healthy meal.

Delicious and easy to prepare...except for the fact that I do not own a food processor (yet that being the most difficult part! I had to add water and more oil to get the blender to ***** down and blend the ingredients....As for the taste, I have yet to fix anything from Giada that I have not loved!!! Very tastee and next time I may even roast the garlic! Another winner, thanks Giada! I am sure my guesses will love it!

Delicious and easy to make! I don't have a food processor, but I do have a Magic Bullet, so I had to blend in 3 batches, but it still turned out great! It's a great dip for veggies and pita chips

Another wonderful recipe. I must admit that one clove of garlic is not quite enough for our taste so, of course, we added more. This will be great as a dip and as a spread on a sandiwch. I also added the zest from the lemon for an enhanced flavor.

Another great Giada creation! Smooth texture, and bright flavor. I read a few of the reviews and after tasting the final product, added the following to heighten the taste: 3 cloves roasted garlic, 1/2 tsp. cumin, 1/2 tsp. coriander, 1/2 tsp. sesame oil and the zest of 1 lemon...Wow, a winner!!

Very tasty. Good texture and layer of flavor. There is a nice zip from the lemon and a nice smokey flavor from the eggplant. Just be sure to season well. It makes a boatload though. Be prepared to eat hummus for days or give some to your neighbor (that's what I did.
