    This is very easy to prepare and the flavors of the garlic, eggplant and beans blend very well. Great for a fancy party, also, try serving along side some thin slices of breads or Nhan.

    I used cannellini beans, cooking them myself, since I had dried and not canned. Drizzled in much less oil at the end into the processor. Made it creamy enough. It is delicious and an upbeat on regular hummus, I think. Going to roast the eggplant a shorter time next time or maybe even grill it on the stove top to preserve nutrients. Thanks.

    I made this last night and it was super yummy. My husband and I ate the whole lot in one sitting.
    I blended all the ingredients except the parsley and eggplant. I only pulsed a couple times with the parsley and eggplant so that I had some texture in the dip. Super Super Super good - going to make it again tonight :

    This recipe is fantastic! The roasted eggplant gives it a very wonderful taste. I will definitely make this again and again. Great flavor and it is also very healthy...and easy to make! What is there not to love?

    This was a very good recipe! I loved it and so did my picky family. It is very light and to me, refreshing. Umm..if you don't like it with white beans then make it with garbanzo beans. And for the olive oil, it specifically says to drizzle, not to dump. Thanks for another great recipe Giada! I will be making this a lot!

    what a nice break from regular chickpea hummus. delicious, creamy -- would make a great sandwich spread in place of mayo. yummy!!!

    I did not have all the "correct" ingredients. I used regular eggplant and small white beans. Followed the direction and had an EXCELLENT, light lunch and will be using for appts this Friday night!!! WONDERFUL tasting !!

    This recipe is much better with garbanzo beans than white beans. It really makes a big difference in both texure and taste. The white beans are not only taeteless but their texuture is too soggy. You won't get the same thing you saw on tv with the white beans. Also, don't overload the eggplant with too much olive oil when you are roasting them. That will add too much moisture to the eggplant.
