    A hearty and yummy soup that is healthy and goes a long way. I made the recipe exactly the way it is stated and it turned out beautifully. I have even tripled the recipe and it still worked out fantastic!

    Tried this soup last night for a dinner party....SO GOOD! Everyone raved, we could have made a meal out of the soup. I will be making this one again and again.

    This is a fabulous soup...I have made it several times already and always a hit. I did use spinach instead of swiss chard, and a couple strips of bacon instead of the pancetta. Will make this again and again!!

    This really hits the spot on a cold winter's night. The flavors blended beautifully. I didn't see Swiss Chard at the grocery store so I bought Kale instead. Worked fine. I didn't peel the potato because there's nutrients in the peeling. I accidentily bought one can of vegetable broth so I ended up with one beef & one vegetable broth - neither low-sodium. Because I used regular, I found it wasn't necessary to add any seasoning at the end except for just a pinch of pepper. Also used dry parsley. I didn't take the time to track down the parmesan rind, so I just melted a 1 oz. chunk of parmesan cheese in the pot. The flavors all blended so nicely. I will defintely be making this again. And oh so healthy!

    This was a great minestrone. Granted I had to make some alterations due to what was available at the grocery store. Baby spinach replaced the Swiss chard, no fresh parsley, and no pancetta (my wife is Jewish. I was surprised how good the soup turned out minus the pig fat and flavors that you would get from the pancetta. If I could get Swiss chard at my Walmart I would put it back in, and fresh parsley if they weren't sold out. As it was, it made a great, healthy, hearty soup for the wintertime! Definitely going to make again before it starts warming up!

    This recipe is so easy and great, the only thing I did different is my family like's our soup not so thick, so I added more beef broth, but I make this all the time and share with friends

    Love this recipe! I substituted a package of assorted dry beans (15 bean blend soaked overnight and cooked in the crockpot for about five hours (with enough water to cover and a can of beef broth before adding the other ingredients. Then, I sauteed and simmered the recipe ingredients on stove top as instructed and added to the crock pot and cooked for about four more hours. The only change - adding a few drops of worcestershire sauce to offset the lack of salt (due to large quantity of dry beans. It was wonderful - thick and hearty.

    I've made this minestrone a few times and LOVE it. Minestrone has always been hit or miss with me, but this recipe is a real winner. Delish! :-

    This recipe is a solid winter minestrone recipe. I've made it a couple times, and have usually added more broth (another can or the rest of the carton for more liquid and another can of tomatoes for a bit more color. It's a great recipe to use whatever you have leftover in the house -- throw in leftover chicken stock you have sitting around, stir in leftover pesto at the end (particularly good to add to individual bowls when serving.
