I have rotated different vegetables to this soup based on what I have around. Don't skip the pancetta or cheese rind since they give the soup a deeper flavor. My kids love it and if we serve as a first course, they eat tons of vegetables; I have even used swiss chard and spinach and they gobble it down in soup form.

I've made a lot Giadas recipe in the past. Most of them were wonderful. This one just wasnt up there. There was nothing savory about the recipe. It just tasted blah!! Maybe I should've put it in the crock pot afterwards to let it cook a little longer on low for 8 or 10 hours. Sorry Giada!! :(

Different from the "usual" minestrone, but not a radical departure. The heel of cheese and blended beans give it a decadent richness. An instant favorite.

After going out to a restaurant and being disappointed by the minestrone soup, I logged onto Foodnetwork and found the video recipe of Giada preparing this soup.
I made it right away and boy it is a 'hit' in my household. Little things that she does really make a big difference. Sauteeing the veggies, adding the pureed beans and using the parmesan rind from really good parmesan.

This was good, but not great! My kids won't eat it. I have to say I have another Minestrone recipe that is much better, but glad I tried it.

I have made this soup many times and it is always wonderful.. We like more beans so I use two cans--one whole beans and the other pureed. I also use baby spinach and sometimes add zucchini . Do not leave out the parmesan rind as it adds tons of flavor.

I made this soup two days ahead of time for our New Years Day football watching festivities. It kept great, my guests scraped the bottom clean and everyone (even those who weren't really feeling up to eating due to all the champagne the night before raved about it. Definitely one of my favorite Giada recipes.
