    I made the Giada's Winter Minestrone for an election night party. Everyone was bringing some sort of soup. This was the hit of the party. It's so hearty! I am making a second batch tonight. My family can't get enough!

    I multiplied the recipe to make it for 45 vegans. So, I left out the pancetta, changed the stock to vegetable stock and added rice pasta and zucchini. It smelled great and tasted absolutely wonderful!!

    It took me forever to make but im a slow cook. I couldn't find Canneli (spelling? beans so I used white beans. I also added another can of beef broth cause I like my soup well soupy! I loved it and so did my friends!

    I love this. I'm on l a liquid diet so I followed recipe except I puree entire soup its so flavorfull and smooth my entire family likes it this way

    I didn't stray from the recipe at all. I got a really good parm, and the flavor really enhanced the soup. This is my favorite recipe of Giada's that I've tried at home so far!

    Loved this recipe. I did alter it just a bit by adding an additional can of diced tomatos, added a can of kidney beans, and withheld about 1/4c of the broth. My boyfriend also liked this very much. Will definately make this again and perhaps will try adding some zuchini next time too!

    I had never made a soup before and this was wonderful. 100% healthy. I took the recommendation from someone to add another can of beans which was perfect. I didn't know fresh veggies could taste so good!
