    I made this today and it was really delicious. I omitted the pancetta, and used a vegetable bouillon cube instead of beef broth. I also didn't have a parmesan cheese rind (which I know would have made a difference but I just sprinkled some parmesan in the serving bowls. I also didnt some of the beans but rather just added all of them in whole. Served with Giada's lemon parsley bruschetta (which I made with basil.

    I made this on a rainy summer day and it was EXCELLENT! I omitted the pancetta because there are vegetarians in my household, but could not tell that the flavor of the soup suffered any. Can't wait to make it again.

    This is a wonderful and comforting soup recipe. There is a lot of prep work, but then there often is for soup recipes. Once the vegetables are chopped, it goes together in no time. It's a great way to use up that last bit of parmesan hovering in your fridge.

    Excellent soup! I substituted proscuitto for pancetta & kale for swiss chard. Delicious! I passed the recipe on to a girlfriend - she loved it as well.

    I followed this recipe with only a few changes. I added about 2 T of minced garlic instead of just 2 garlic cloves minced. Also use a 1/2 inch slice of pancetta chopped, as well as three thin slices of pancetta. Added 2 T McFadden Farms 100% organic Soup and Bean Herbs and a bay leaf. Other than that, I followed the recipe as written and it was delicious. Will definitely make it again--it's a keeper!!!

    I am not a big fan of greens like chard and kale, but this delicious soup made me a fan. I used a bunch of baby chard mixed with baby spinach and it was delicious. I doubled the tomatoes and added a tiny bit more beef broth. It almost tasted too delicious to be healthy, but it is indeed good for you. The pancetta adds a subtle flavor without making the soup fattening. The parmesan is key--including sprinkling it on top before you eat it. Definitely doesn't need extra salt, but lots of ground pepper was yummy. I needed a little more time to cook the potatoes; I might chop them smaller next time. Anyway, good soup!
